Oh the cookies you will cook
Dr. Seuss’ birthday was March 2, so this recipe is dedicated to him. (If I was feeling more clever today I would make this entire column rhyme in classic Dr. Seuss style, but that’s just not going to happen today.)
These Rainbow Pinwheel Cookies are nicknamed Dr. Seuss cookies because they resemble the colorful “Oh the Places You will Go” book cover.
Or at least they are supposed to. My cookies didn’t quite look like those from the recipe posted by Shelly Ruybalid on souder sstudios.com, but after some rave reviews at my church potluck last weekend, I thought I’d share the recipe with you anyway.
With a super easy sugar cookie mix, some neon food coloring and some sprinkles, you can have a fun spring treat for the kids this weekend. I think they look more like tie dye than Dr. Seuss, but I’m pretty sure the kids will eat them regardless. The kids can probably even help you mix ’em, swirl ’em and twirl ’em!
Rainbow Pinwheel Cookies
1 17.5-ounce bag Betty Crocker sugar cookie mix, mixed according to package directions (or your favorite sugar cookie dough recipe)
Liquid food coloring, as desired (McCormick Neon shades work well)
Rainbow sprinkles, if desired
Preheat oven to 350 degrees. Divide dough evenly into five bowls and color each with a different color liquid food coloring. Roll each color of dough into grape-sized balls. Combine a ball of each color and quickly roll into a larger ball. It will look like a little beach ball. Then roll that ball between your hands and the counter until you have a cylinder about 12 inches long. Starting from one end, roll the dough into a coil, twisting the cylinder as you go. Roll edges of the cookie in sprinkles. Bake the cookies for 10 to 11 minutes or until done. Yields approximately 3 dozen cookies.
