    Misti Redman got this yummy corn salad recipe, featuring a little crunch and spice and everything nice, from a friend years ago. She’s been passing it on ever since. “Everyone who eats it wants the recipe,” she said. “There’s always an empty bowl when I take it anywhere.” Try it for yourself!

Corn Frito Salad

    1 30-ounce can whole corn
    1/2 cup red onion, chopped
    1/2 cup red or green pepper
    1 cup mayonnaise
    1 cup shredded cheddar cheese
    1 bag Fritos chili cheese corn chips

    Drain corn well.
    Mix corn, onion, peppers, mayonnaise and cheese.
    Add crushed chips just before serving.
    Enjoy!
