Don Carlos Bar & Grill opens

Hungry Holyokans now have another dining option in downtown Holyoke. Don Carlos Bar & Grill opened Sunday, Aug. 7, at 142 N. Interocean, the former site of Sara’s Cuisine.

The restaurant touts “flavors that make you travel to Mexico,” with authentic dishes including tacos, chimichangas, quesadillas, smothered burritos, carne asada and enchiladas.

The crew behind Don Carlos Bar & Grill includes husband and wife Alonso and Mirna Rios and their daughter and her husband, Tanya Rios and Lenin Soto. Mirna and Lenin will be the main cooks in the restaurant.

After Sept. 6, they plan to open the bar area of the building, with their son Adrian Rios in charge of that part of the business.

The restaurant is named after Alonso’s late father as a way to remember him and honor his memory.

Don Carlos Bar & Grill is offering traditional family recipes and is building on years of restaurant experience.
