New food truck on East Denver Street dishes up quesabirria, tacos and more

There’s no missing the bright yellow food truck parked along Highway 6, and there’s no forgetting the tasty Mexican fare served up there.

Omar Hermosillo opened Taqueria El Dragón on Saturday, Jan. 2, in the 200 block of East Denver Street in Holyoke. The business is open seven days a week from 8 a.m.-5 p.m.

While Hermosillo is new to the food industry, he’s excited to share his favorite recipes with the community.

So far, the most popular dish at Taqueria El Dragón has been quesabirrias with consome — a cheesy taco paired with a cup of special broth on the side.

Also on the menu are shrimp cocktail, tortas, hamburgers, tacos, quesadillas and breakfast burritos.
