Peanut Butter Fudge

This delicious peanut butter fudge recipe came from Gloria Beckius’ mother, who received it from a friend over 40 years ago. “My mother was a wonderful cook,” said Beckius. Beckius took over the favorite fudge recipe after a stroke kept her mother from being able to make it. “Someone had to make the candy!” said Beckius.

PEANUT BUTTER FUDGE

2 cups sugar
1 small can evaporated milk
1 (7-ounce) jar marshmallow creme
1 cup peanut butter
1 teaspoon vanilla

Line an 8x8 inch square baking pan with foil and grease with butter. Set aside.
Combine sugar and milk. Stir until sugar has dissolved, bring to a boil and boil for five minutes (or until soft-ball stage). Stir constantly while boiling.
Remove from heat and add the jar of marshmallow creme, the 1 cup peanut butter and 1 teaspoon vanilla. Mix well.
Spread in lined pan. Allow to cool, then cut and serve.
