Recipe Train

It’s just not summer on the farm without any of Grandma’s classics on the table. Sandy Einspahr said her grandmother’s cool Sea Breeze Salad is an old, old recipe from a Belvidere, Nebraska, church cookbook. “It makes a nice big recipe,” said Einspahr. “You can send it to the field with a cool pack, and it stays good and doesn’t melt down.”

Sea Breeze Salad

   2 (3 oz.) boxes lime Jell-O
    1 (3 oz.) box lemon Jell-O
    2 cups boiling water
    2 cups cold water
    1 can lemon pie filling
    1 (8 oz.) container Cool Whip
    1 cup crushed pineapple, drained
    
    Dissolve Jell-O in boiling water. Add cold water and mix well. Refrigerate until set, then stir in pie filling with electric mixer.
    Remove 1 cup of the mixture and blend with Cool Whip. Add pineapple to the rest, and spread it in a 9x13 inch pan.
    Spread the remaining cup of mixture over the top and refrigerate until serving.
    *NOTE: Lemon instant pie filling combined with 1 3/4 cups milk as per box instructions can also be used.
