Recipe Train

Amy Einspahr submitted this recipe; however, she admitted that it originally came from Diane Rahe who used spaghetti.  Amy changed the recipe to colored rotini pasta, and somehow it became Amy’s Pasta Salad! Great for barbecues!

Pasta Salad

4 pkg ranch milk-style dressing
4 cups mayonnaise
1 quart buttermilk
3 boxes Barilla colored rotini
2 cups cauliflower
2 cups broccoli
1 cup celery
1/2 cup green onions
1 yellow onion
1 red onion
1 cup radishes
2 cups grape tomatoes
2 cans sliced black olives

Mix ranch dressing, mayonnaise and buttermilk together.
Cook pasta according to package directions, drain and rinse with cold water.
Clean and chop vegetables.  Combine pasta, vegetables and dressing. Store in a sealed container.
Best if made the day before.  May need to add extra dressing the next day.
