Recipe Train
This recipe was a favorite of Carol Krumm’s mom and their family because it was a little different than meatloaf and the vinegar sauce added a different spiciness to the meat. Carol is not sure, but she thinks her mom added poking the holes because most recipes just say to spoon the sauce over the ham loaf. Her mom said she thought the sauce soaked in the meat better to give it that added flavor.
Mom’s Favorite Ham Loaf
1 1/2 pounds ground ham — some grocery stores have this, some don’t
1/2 pound ground pork — can just use all ham if desired
2 eggs
1 1/2 cups dry bread crumbs or any kind of cracker crumbs
1 cup milk
1 onion chopped — or dehydrated onions
salt and pepper to taste
Sauce:
1 cup brown sugar
1 tablespoon mustard
1/4 cup cider vinegar
Preheat oven to 350 degrees. Combine ham, pork, eggs, bread crumbs, milk, onion, salt and pepper in a large mixing bowl.
Form mixture into a loaf and place in a lightly greased 9x13 inch baking dish. Bake for 1 1/2 hours.
Combine sauce ingredients. During the last 15 minutes of baking, take the bottom end of a butter knife and poke holes one inch apart in the ham loaf. Spoon all of the sauce mixture over the loaf.
My family likes to add extra sauce when the ham loaf is served. If you do this, you will need to heat the mixture in a sauce pan or in the microwave to dissolve the sugar.
