Celena Kennedy is thankful for all of her grandma Bernice Stout’s cooking and baking lessons. Kennedy’s grandma inspired her love for cooking through all of the time the two spent in the kitchen. It is because of Stout that Kennedy enjoys looking through cookbooks, making the time and effort to have dinner guests over, and cooking from scratch as much as possible. In honor of her grandma, Kennedy is sharing Stout’s raisin cream pie recipe.
Raisin Cream Pie
1 cup cooked raisins
1 1/2 cups half-n-half
1/2 cup sugar
2 tablespoons flour
3 beaten egg yolks
Cook the raisins in boiling water for 15 minutes, then drain the water.
In the same pot, add the flour, sugar and half-n-half to the raisins and boil for 5 minutes. Stir constantly to keep the cream from burning.
Take off the burner, add the egg yolks and cook over a medium heat, stirring constantly, for an additional 3 minutes.
Put the filling in a baked pie shell and cover with a meringue recipe.
