    This better-than-beef turkey meatloaf was taught to Corrin Myers by her husband, J.R. “Meatloaf is one of my favorite meals, and I had always done the basic recipe with ground beef until he made it for me this way,” she said. “I haven’t used beef again! This is tastier and healthier.”

Better-than-Beef Turkey Meatloaf

    1 sweet onion
    Extra virgin olive oil
    Salt and pepper to taste
    2 teaspoons thyme
    1/4 cup Worcestershire sauce
    1/2 cup chicken stock
    1 tablespoon tomato paste
    3 pounds ground turkey
    1-2 eggs
    1/2 can bread crumbs
    
    Saute onions with extra virgin olive oil, salt, pepper and thyme until translucent. Add Worcestershire sauce, chicken stock and tomato paste. Mix and then cool.
    Mix turkey, egg and bread crumbs. Add to other ingredients and mix well. Place in meatloaf pan and cover with foil. Bake for 1 hour at 375 F.
