Rhubarb Pie

Mary Jo Funk has had this rhubarb pie recipe in her recipe box for many, many years. She said her whole family likes rhubarb, and this recipe is easy to prepare. “There is never any leftover pie!”

Rhubarb Pie

     5 cups chopped rhubarb
     3 tablespoons flour
     1 1/2 cups sugar
     1 egg, slightly beaten
     1 tablespoon water
     1 tablespoon butter

    
     Preheat oven to 450 F. Make pie crust. Use a deep dish pie pan. Place crust in pan. Fill with rhubarb.
     Mix the flour and sugar and sprinkle over rhubarb. Add water to the beaten egg. Pour over the rhubarb mixture. Dot with butter.
     Cover with top crust and flute edges. Place pie pan on a cookie sheet. Bake for 10 minutes.
     Turn oven temperature down to 375 F and bake an additional 40 minutes.
