Recipe Train

Ranae McCallum likes to think she gets her “cooking with love” from Grandma Lois Funk. “I hardly follow recipes and never write anything down. I just do it from memory,” said McCallum. Her grandma was the same way. “Around our house, we just call that cooking with love,” she said. “I loved Christmas dinners at Grandma’s house because she always had this salad, and it’s still my favorite to make and have at Christmas.”

Grandma Lois’ 7Up Salad

    2 packages lime Jello (larger Jello box size)
    2 cups boiling water
    2 8-ounce packages cream cheese, softened
    2 cups small marshmallows
    2 7UP cans
    2 cans crushed pineapple (drain about half of the juice)
    Boil water on the stove. Add jello and dissolve. Add marshmallows and cream cheese, turn to low heat, and whip untill dissolved.
    Let mixture cool. Add 7UP and pineapple.
    Make the day before so it has a firm set before serving.
