It’s simple, it’s tasty, and you’ve probably already got all the ingredients in your kitchen. Pam Haynes’ sour cream coffee cake, originating from a friend in Nebraska, is a great go-to recipe.
Sour Cream Coffee Cake
TOPPING:
1/3 cup brown sugar
1 teaspoon cinnamon
½ cup sugar
CAKE:
1 cup butter or margarine softened
2 eggs
1 teaspoon vanilla
1 cup sugar
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 cups flour
1 cup sour cream
Preheat oven to 350 degrees. Grease a 9x13 pan.
In a small bowl, mix topping ingredients and set aside.
In a separate bowl, combine baking powder, baking soda, flour and salt and set aside.
With a mixer, cream butter, sugar, eggs and vanilla, then add sour cream and mix well. Add in the flour mixture.
After mixed, spread half of the batter in the prepared pan and sprinkle with half of the cinnamon sugar topping. Repeat layers.
Bake for approximately 30 minutes or until an inserted toothpick comes out clean.
After the cake has cooled, glaze with a powdered sugar glaze if desired.
