Eldene Hinde said her mom, Ida Mae Skipworth, was the happiest when she had any of her children and/or grandchildren sitting at her kitchen table. She always had some kind of food or snacks prepared. Two of the many that were favorites were the beef scoops and goot balls. Both are quick and easy, said Hinde.
Beef Scoops
8 ounces cream cheese
1/2 cup milk
Hamburger
Toppings
Tortilla chips
Mix the cream cheese with the milk. Spread the mixure on the bottom of a platter.
Brown hamburger with salt, pepper, onion, garlic or any other seasoning. Strain and layer on top of the cream cheese.
Add lettuce, olives, tomatoes, grated cheese and any other toppings of your choice. Add picante sauce on the top. Scoop it up with tortilla chips.
Goot Balls
2 sticks butter
1 pound caramels
1 can sweetened condensed milk
Large marshmallows
Rice Krispie cereal
Melt butter, caramels and sweetened condensed milk in double broiler. Dip whole big marshmallows into the mixture and then dip the balls in Rice Krispie cereal.
