Mary Austin said her quest for delicious salmon recipes began when she was attempting to replicate a dish she had enjoyed at Macaroni Grill. Hence, the sweet barbecue salmon. Since then, she has collected several salmon recipes that have become favorites at her dinner table. “I enjoy preparing salmon for company and sharing a variety of ways to serve these healthy, tasty dishes,” she said.

 

Sweet Barbecue Salmon

4 (6-ounce) salmon fillets
1/2 cup soy sauce
2 tablespoons honey
1 tablespoon Dijon mustard
1 tablespoon minced fresh parsley
2 or 3 garlic cloves, minced

Pierce the salmon with a fork and place in a sealable plastic bag. Combine the soy sauce, honey, Dijon mustard, parsley and garlic in a bowl and mix well. Pour the soy sauce mixture over the salmon and seal; turn to coat.

Marinate in the refrigerator for 1 to 4 hours, turning occasionally. Grill over medium-high heat for 5 minutes per side or until the fillets flake easily. This salmon is great served in a salad.

 

Perfect Salmon

1/2 cup mayonnaise
1/2 cup thinly sliced green onions
1 teaspoon prepared mustard
1 salmon or other freshwater fish fillet (2 1/4 pounds), skin on
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Spray rack in broiler pan with nonstick vegetable cooking spray. Set aside. In small mixing bowl, combine mayonnaise, onions and mustard. Set aside.

Place fillet skin side down on prepared broiler pan. Place under broiler with surface of fish 7 inches from heat. Broil for 10 minutes. Spread mayonnaise mixture evenly on fillet. Sprinkle salt, pepper and garlic powder evenly over mayonnaise mixture. Broil for 10 to 15 minutes, or until fish is firm and opaque and just begins to flake, and mayonnaise mixture is golden brown.
