Recipe Train
Lu Radtke has always liked this recipe. Not only is it easy to make, also it is so delicious. Some people tell her they like to add strawberries to the mix, but she always enjoyed the tartness of the rhubarb by itself.
Rhubarb Crunch
3 cups diced rhubarb
6 tablespoons flour
1/4 cup rolled oats (quick cooking)
3/4 cup sugar
1/4 cup brown sugar
1/4 cup butter or oleo
Arrange rhubarb in a greased baking dish. Sprinkle with white sugar mixed with 2 tablespoons of the flour.
Blend brown sugar, oats, remaining flour and butter or oleo and sprinkle over rhubarb.
Bake 40 minutes in a 325 degree oven. Serve warm or cold with or without ice cream or cream.
