Recipe Train

Jan Hewitt shared this recipe because she says it’s a nice dessert to prepare for Valentine’s Day and it freezes well.

Cherry Turnovers

    1 pound butter
    4 cups flour
2 cups small curd creamed cottage cheese
    2 tablespoons sugar
    1 can cherry pie filling
    1 teaspoon almond extract

Cream butter with flour. Add cottage cheese and sugar. Beat well until mixture is smooth. Chill overnight.
Roll dough thin for pastry. Cut into five inch squares. Add almond extract to cherry pie filling.
Place one tablespoon of filling mixture in center of square. Fold pastry into a triangle. Use fork tines to press edges together and make a pretty edge.
At this point, turnovers may be frozen for later use, if desired. Other canned pie fillings may be used, such as apple, blueberry or raspberry.
Bake at 400 degrees for 18 minutes.
Drizzle a powdered sugar, milk vanilla icing on top of turnover for that extra touch.
