Corn Salsa

    Kay Schmidt says this is her go-to recipe that is enjoyed all summer long on the patio or at any potluck.

Corn Salsa

    2 cups sweet corn
    2 cups black beans washed and rinsed well
    1/2 cup red onion chopped
    1 large red pepper chopped
    1 large green pepper chopped
    1 small bunch cilantro chopped
    2 tablespoons olive oil
    3 limes juiced
    Salt, pepper and garlic powder to taste

     Combine sweet corn, black beans, onion, peppers and cilantro together and mix well. Prepare dressing of olive oil, lime juice, salt, pepper and garlic powder. Pour over chopped mixture. Mix well. Refrigerate at least two hours and serve with scoop chips.
